Date Nut Cake

Recipe of Genevieve Hedden (Thomas Hedden's mother)

Ingredients:

1½ cups all-purpose flour
1½ cups white sugar
16 ounces diced dates
4 cups whole pecans (about a 1 pound package)
½ cup (1 stick) butter (at room temperature; don't use margarine!)
4 large eggs
2 teaspoons baking powder
1 teaspoon salt
1½ teaspoons vanilla
angel food cake pan
wax paper

Cut wax paper to fit bottom of angel food cake pan. Grease and flour paper and pan.

In mixing bowl combine butter, sugar, salt, eggs, vanila, and ½ cup of the flour. Use electric mixer to mix thoroughly. Add baking powder and mix again.

In separate bowl mix rest of flour with dates and pecans. Hand stir this mixture into batter.

Place batter in angel food cake pan and allow to rest for 1 hour before baking. Bake at 350° F for 50 minutes. Reduce heat to 325° F and bake for additional 5-10 minutes or until toothpick comes out clean.

Start making another one, because this one will disappear shortly after people taste it.
