Thomas Hedden's Guacamole Recipe

Ingredients:

6-8 ripe avocados
2-3 lemons 
1-3 raw tomatoes
1-2 raw tomatillos
2-3 cloves raw garlic 
¼ to ½ raw yellow onion 
2-3 sprigs fresh cilantro 
5-10 ounces hot salsa (something like La Vittoria Salsa Ranchera) 

Procedure:

I strongly recommend NOT using a food processor or blender.
I enjoy the lumpy texture and occasional strong taste of one
or another of the ingredients, which means that the taste is
never the same from bite to bite.
I also recommend adding less of each of the ingredients than
I recommend and tasting the guacamole to determine the exact
amount of each of them that you want to use. Add more or less
to suit your personal taste. De gustibus ... non disputandum.
Peel avocados and remove seeds/pits. Mash with old-fashioned potatoe masher.
Juice lemons, pour juice into mashed avocados.
Chop tomatoes into pieces no smaller than ¼", add to mixture.
Chop tomatillos into small pieces, add to mixture.
Chop garlic and onion into small pieces, add to mixture.
Chop cilantro, add to mixture.
Add salsa.
Mix.
Taste and adjust quantities of each ingredient.
